Sweet Potato Pie

  • 1/2 cup sugar
  • 2/3 cup brown sugar (add until thick soup consistency)
  • 2 eggs
  • 1 cup evaporated milk
  • 1 cup sweet potatoes
  • 3 Tbsp. butter
  • 2 tsp. vanilla
  • 1/2 tsp. salt
  • 1 tsp. cinnamon

Cook potatoes and mash. Beat eggs, and then add sugar and milk. Mix until creamy. Add mashed potatoes, butter, salt, vanilla and cinnamon. Pour in unbaked pie shell and cook 45 to 60 minutes at 350 degrees F. The pie is done when you insert a knife into the middle and it comes out clean. Serve with whipped topping.
